Za’atar is a versatile, flavorful middle eastern spice blend that packs a punch of flavor! If you’ve never used this spice blend, don’t be afraid! If you like any of these spices, then you’ll love za’atar; thyme, cumin, sumac, sesame seeds and coriander. Za’atar is used to season the potatoes and chicken in this dish and is balanced by the light, whipped feta yogurt.

As you all know, I’m a huge fan of one pan dinners. There’s less to cleanup and you don’t have to stress about managing various pots and pans. This is a great meal to serve at a dinner party if you’re looking to impress your guests. I have some pointers in the recipe instructions for how to build a beautiful presentation for this dish.

Ingredients for One Pan Chicken and Potatoes

This recipe uses just 10 simple ingredients, 1 baking dish and is ready in an hour. It is truly the perfect weeknight dinner! The best part about this recipe is the pan juice that emerges at the bottom of the pan. All of the chicken, lemon and tomato juices sink to the bottom and the result is a rich, delicious sauce. Don’t forget to scoop up all that yummy goodness!

How to Make One Pan Chicken and Potatoes

This recipe is super simple to make and most of the ingredients end up in the baking dish at some point. First, start by roasting potatoes, tomatoes and garlic. Once finished, remove the garlic to be used in the whipped feta yogurt. Add the chicken and lemon wedges to the baking dish and roast. Add some crispiness to the chicken skin by broiling for a few minutes. You can make the whipped feta yogurt while the chicken is roasting. It’s that simple!

Ingredients

Units Scale
  • 1.52 lbs Yukon gold/yellow potatoes (roughly 4 cups), diced
  • extra virgin olive oil as needed
  • 1 1/2 tbsp za’atar spice blend, divided
  • salt + black pepper as needed
  • 1 pint cherry tomatoes
  • 4 garlic cloves, peeled
  • 1.75 lbs or 4-6 bone-in chicken thighs with skin (the smaller the better)
  • 1 lemon
  • 3/4 cup crumbled feta cheese
  • 1 cup plain Greek yogurt
  • 1/2 cup fresh cilantro, plus more for garnish

Instructions

  1. Cook the potatoes: Preheat the oven to 425°F. To a 9×13 baking dish add the potatoes, tomatoes and garlic cloves. Drizzle with 1/4 cup olive oil and season with 1 tsp salt, 1/4 tsp black pepper, and 1 tbsp za’atar. Give everything a good stir. Roast in the oven uncovered for 15 minutes. 
  2. Prep the chicken: Meanwhile, add the chicken thighs to a large bowl and drizzle with 1-2 tbsp olive oil (just enough to coat the chicken). Season with 1 1/2 tsp salt, 1/2 tsp black pepper, and the remaining 1/2 tbsp za’atar. Take the lemon and zest it into a separate small bowl then set aside for later. Cut the lemon into quarters then set aside.
  3. Cook the chicken: When the potatoes are done roasting, remove the pan from the oven (the potatoes should start to develop some color and the tomatoes should be soft and burst easily). Use tongs to carefully remove the garlic and set aside for later. Give the potatoes and tomatoes a good stir, then place the chicken thighs (skin side up) on top. Place the lemon wedges in the pan in between the thighs. Roast in the oven for 35 minutes (the chicken should reach an internal temperature of 165°F).
  4. Make the whipped feta yogurt: To a food processor or blender add the feta, Greek yogurt, lemon zest and cilantro. Blend until smooth and creamy then set aside.
  5. Crisp the chicken: When the chicken is done cooking, remove the pan from the oven and turn on the oven broiler to high. Use tongs to carefully remove the lemons from the pan then set aside. Place the pan back in the oven directly under the broiler for 2-4 minutes until the chicken skin is nicely browned and crispy. 
  6. Serve and enjoy: (This step is optional, but helpful for a beautiful presentation) Use tongs to transfer the chicken to a plate. Use a slotted spoon to transfer the potatoes and tomatoes to a large serving dish. Place the chicken back on top of the potatoes. Next, dollop the whipped feta yogurt over the chicken and potatoes. Don’t forget about than amazing pan sauce sitting at the bottom of the baking dish. Use a spoon to drizzle the pan drippings over the feta yogurt. Squeeze the lemons over everything then garnish with additional fresh cilantro. Enjoy!
