Description

These Easy and Impressive Pork Chops are composed of 3 simple elements that are individually delicious and easy to prepare. Seared pork chops are topped with a white wine pistachio cream sauce, apple salad and garnished with crispy prosciutto. You’ll think that you’re eating at a fine dining restaurant in the comfort of your own home!


Ingredients

  • 2.5 oz spring mix salad
  • 1 granny smith apple, chopped into thin strips
  • 1/2 cup walnuts
  • 2 tbsp extra virgin olive oil, divided
  • 2 tbsp honey
  • 1 tbsp unsalted butter
  • 4 garlic cloves, minced
  • 1/4 cup pistachios, chopped extremely fine (or ground in a coffee grinder)
  • 1/4 cup dry white wine, like chardonnay
  • 3/4 cup heavy cream
  • salt and pepper to taste
  • 2 oz prosciutto
  • 4 pork chops

Instructions

  1. Prepare the apple salad: In a medium mixing bowl, toss together the spring mix, apples, walnuts, olive oil and honey with tongs. Set aside.
  2. Prepare the pistachio cream sauce: In a medium saucepan, melt the butter over medium heat. Add the garlic and cook until fragrant, about 2 minutes.
  3. Next, add the pistachios to the pan and mix well, allowing the pistachios to toast. Pour the wine into the pan and allow some of the liquid to evaporate, about 2 minutes.
  4. Add the heavy cream to the saucepan and stir well. Allow the sauce to simmer until it thickens, about 8 minutes. When the sauce is ready, keep the saucepan over low heat to keep it warm until the other components are ready.
  5. Meanwhile, heat a medium skillet over medium heat. Tear the strips of prosciutto into pieces and add to the hot skillet. Allow the prosciutto to crisp on both sides for about 2 minutes per side. Set the crisped prosciutto aside on a plate.
  6. Prepare the pork chops: Season the pork chops generously with salt and pepper. Heat a large skillet over medium-high heat (cast-iron works best here) then add a drizzle of olive oil.
  7. Sear the pork chops on one side until nicely browned, about 3 minutes, then flip and sear the other side an equal amount of time. The pork should have an internal temperature of 135F.
  8. To assemble, place a pork chop on a plate then top with a few spoons of the pistachio cream sauce. Top with a small amount of the apple salad then garnish the plate with a few pieces of the crisped prosciutto. Enjoy!
