There are few things in life that I love more than these brownies. I selfishly bake them for myself and sneak downstairs in the middle of the night to indulge. I have always been an advocate for brownies made from scratch – there is a level of flavor and love that I don’t think can be achieved in a box brownie mix. I tend to under-cook brownies because I LOVE that gooey center that is reminiscent of a chocolate lava cake. Peanut butter adds another dimension of flavor and gives these brownies that ultra rich taste.

Ingredients for Chocolate Peanut Butter Brownies

Bitchin' Brownies
  • semi-sweet chocolate chips
  • sugar-free all natural peanut butter – an all natural, sugar-free peanut butter is exactly what this recipe needs. If you’re new to this type of peanut butter, you’ll have to use a knife to stir the peanut butter and oil together.
  • unsalted butter
  • granulated sugar
  • light brown sugar
  • large eggs
  • vanilla extract
  • fine sea salt
  • all-purpose flour
  • cocoa powder
  • your favorite chocolate truffles – I prefer to use an assortment of dark chocolate, milk chocolate and white chocolate truffles in my brownies. Lindor has a variety pack that is perfect for this recipe.
  • bittersweet chocolate chips – my go-to chips are the Ghiradelli 60% cacao bittersweet chocolate chips. The morsels are much larger than your average chip and the quality is undeniably great.
  • powdered sugar

Here’s what else you’ll need:

  • heat proof bowl
  • rubber spatula
  • large mixing bowl
  • fine mesh strainer for sifting
  • whisk
  • 9-inchx9-inch baking pan
  • non-stick spray
  • measuring cups and spoons

These chocolate peanut butter brownies (aka bitchin’ brownies) live up to their name with their incredibly addicting chocolate and peanut butter flavors. Chocolate truffles take the chocolate flavor to another level and add to that ooey gooey, fudgy center.


Ingredients

  • 1 cup semisweet chocolate chips
  • 1/2 cup (1 stick) unsalted butter, cut into 1 tbsp pieces
  • 1/2 cup sugar free all-natural peanut butter
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp fine sea salt
  • 1/2 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/4 cup bittersweet chocolate chips
  • 8 milk chocolate truffles (I recommend Lindor truffles)

Garnish

  • 1/4 cup sugar free all-natural peanut butter, to drizzle
  • powdered sugar, to sprinkle

Instructions

  1. Melt the chocolate, butter and peanut butter: In a microwave-safe bowl, add the semisweet chocolate chips, butter, and peanut butter. Microwave in 10-15 second intervals (stirring between each interval) until the butter is completely melted, about 80 seconds total. Do not overheat, even if the chocolate is not completely melted. Stir until smooth and creamy then set aside.
  2. Whisk the sugars and eggs: In a large bowl, whisk the granulated sugar, brown sugar and eggs until smooth. Add the vanilla extract and salt then whisk to combine.
  3. Temper the egg mixture: Pour a small amount of the melted chocolate mixture into the egg mixture and whisk to combine. Pour the rest of the chocolate mixture into the egg mixture and whisk until smooth and creamy.
  4. Add the dry ingredients: Sift the flour and cocoa powder into the bowl and use a rubber spatula to fold into the batter. Add the bittersweet chocolate chips and the truffles then give it one final stir.
  5. Bake the brownies: Pour the batter into a greased 9×9 baking dish. Bake for 30 minutes for gooey brownies or 40 minutes for firm brownies. The brownies will still be jiggly in the center, but will firm up as they cool. Allow the brownies to cool for at least 20 minutes before decorating.
  6. Decorate the brownies: Sprinkle the top of the cooled brownies lightly with powdered sugar then drizzle the peanut butter in a diagonal pattern. Cut into 9 equal squares and enjoy!
