Apple Spice Cake

  • 1/2 cup dark brown sugar
  • 2 large eggs
  • 2 cups unsweetened applesauce
  • 1/2 cup amber ale or pumpkin ale
  • 1/2 cup neutral oil
  • 1/4 cup maple syrup
  • 2 tsp ground cinnamon
  • 1 tsp ground cardamom
  • 1 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/2 tsp fine sea salt
  • 2 1/4 cups (300g) all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder

Cream Cheese Frosting

  • 8 oz ( 1 stick) cream cheese, room temperature
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 2 cups confectioner’s sugar
  • 1/4 cup maple syrup
  • 1/2 tbsp ground cinnamon

Instructions

Apple Spice Cake

  1. Preheat oven to 350°F. Whisk together the eggs and brown sugar in a large bowl until foamy. Add the applesauce, beer, oil, maple syrup and all of the spices and whisk to combine.
  2. To the same bowl, add the flour, baking powder, baking soda and salt and whisk to combine. Pour the batter into a greased 9×13-inch baking pan (see notes below for layer cake instructions). Bake for 30 minutes or when cake is nicely browned. Use a toothpick to test doneness of cake. Allow cake to cool completely before frosting.

Cream Cheese Frosting

  1. While the cake is cooling, prepare the frosting. Using a stand mixer with a paddle attachment (or handheld mixer if you don’t have one), add the cream cheese and butter to a bowl and mix on medium until smooth. Add the maple syrup, cinnamon and cardamom and mix on medium until smooth. Finally, add the confectioner’s sugar and mix until well combined and smooth. Spread the frosting on the cake once it has cooled and serve. Enjoy!
